Origin of the senyoret rice
The origin of the name “arroz del senyoret” is due to the fact that, in the past, this variety of rice was cooked for wealthy people. That is why all the fish and seafood was presented peeled, so that the gentlemen would not get their hands dirty.
The recipe for Arroz del Senyoret usually includes a mixture of seafood and fish, such as shrimp, prawns, squid, cuttlefish, mussels and sometimes even white fish such as sea bream or sea bass. These ingredients are presented peeled and boneless, facilitating their consumption.
The base of the dish is a typical rice of the region, such as bomba variety rice, which has an excellent liquid absorption capacity to achieve a perfect texture in the rice. It is cooked in a tasty broth made from the remains of seafood and fish, along with other ingredients such as tomato, garlic, paprika and saffron.
Presentation is an important part of this dish, and it is usually served in a paella pan with the ingredients well distributed. In addition, it is accompanied with alioli, a garlic and olive oil based sauce, which adds an extra touch of flavor.
